150ml sunflower/ rapeseed oil
150g pitted dates/ apricots (soaked in boiling water)
150g wholemeal self raising flour
2 tsp baking powder
4 tsp cocoa powder (dissolved in 2 tbsp of hot water)
4 tbsp Sunwheel apple + pear/ pear + apricot spread
6 tbsp Billingtons Demerara sugar/ any unrefined cane sugar
6 tbsp soya milk
50g pecan nuts/ hazelnuts (crushed)
1 banana (preferably overripe)
Mix the oil with the dates/ apricots, add the flour and baking powder and mix.
In a separate bowl mix the apple and pear spread with the cocoa powder in water, add the soya milk and mix. Mix these into the other bowl with the nuts and add in a mashed banana.
Cook for about 30-40 minutes at 160ºc/ 325ºf/ gas mark 3.
